Wondering what to do with that yellow squash you see at this time of the year in the grocery store?? Here are not one, but TWO recipes you can make with ONE squash! Go ahead, try them out.

WAY ONE:

Turkey Spaghetti Squash 'Scramble'
Ingredients
1/2 medium onion, chopped
3 cups kale, chopped
1/2 lb ground turkey
1/2 spaghetti squash, cooked
3 cups kale, chopped
1/2 lb ground turkey
1/2 spaghetti squash, cooked
1 teaspoon Italian Seasoning
1 tablespoon Oregano
1 teaspoon Sea Salt
1. Cook the ground turkey in a large pan until it is no longer pink. Add italian seasoning, oregano and sea salt.
2. Add the chopped onions and kale to the ground turkey, mixing constantly on medium heat.
3. Halve the spaghetti squash you previously prepared, length-wise. Using a fork, 'string' out the squash into the pan until you are left with the shell.
4. Scramble everything together for an additional 2-3 minutes. Serve.

4-5 cloves of garlic, sliced
1/2 lb ground turkey or lean ground beef
1 teaspoon oregano
1 teaspoon basil
1 tablespoon parsely
1 15 oz can tomato sauce
1/2 spaghetti squash, cooked
1. In medium sauce pan, heat olive oil. Add onions, garlic, and spices.
2. Brown ground turkey or lean ground beef in same pan. Add tomato sauce to pan.
3. Using a fork, 'string' out the squash into the pan until you are left with the shell.
4. Mix sauce equally over the spaghetti squash. Serve.
